Sushi Ishikawa is creating a new tradition.
Sushi originated in the early 10th century, inspired by methods used to preserve seafood. Over time, it spread across Japan, evolving into various regional styles known as narezushi. During the Edo period, these long-fermenting styles began to decline, giving rise to quicker, more accessible forms of sushi called hayazushi. By the Genroku era, sushi shops began appearing throughout towns, and many became famous local establishments.
In recent years, sushi has gained international popularity—particularly in Western countries—as a healthy, diet-friendly food. The global rise of the “sushi bar” has added a new chapter to the world’s culinary history. Like soba and tempura, sushi has come to represent Japanese cuisine, with master sushi chefs carrying on its proud traditions.
At Sushi Ishikawa, we are committed to preserving this heritage and never compromising on authenticity by following misleading trends born of the recent sushi boom. Our goal is to create sushi that makes our guests smile and nod in satisfaction.
Our chefs have trained at some of Tokyo’s most prestigious establishments, and we are dedicated to excellence in every step—from sourcing ingredients and preparation to hospitality. Through these efforts, we aim to create a new tradition of sushi.
